Pumpkin Spice Muffins

These are the easiest things I’ve ever made!

Ingredients

1 box of spice cake mix
1 small can pumpkin (not pie filling)
milk

Instructions

Preheat oven to 350. Line muffin tin with paper cups or grease tins.

Mix pumpkin, spice cake mix and enough milk to make the batter the consistence of muffins (about 1/4 – 1/2 cup).

Spoon dough into muffin pan. Bake at 19 – 22 minutes.

Judy…can you tell me about how much is in a small can of pumpkin?

  • Sandy K:

I love this easy fall recipe and they taste so good.

  • Wendy J:

A small can of pumpkin is 15 oz. This is one of my Weight Watcher recipes. I have lost 42 pounds since April. We love these muffins and Judy’s blog!

  • That does sound like the easiest recipe ever – I love things made with cake mixes – and now my mouth is watering for them. Going to make them soon. Thanks for sharing!

  • Toni Macomb:

I made a similar recipe this weekend! I’ve been craving something pumpkin. I added eggs and some pumpkin pie spice and made 9×13″ cake. I had a problem finding a 15oz can of pumpkin in our store…seems like they only carried the large size so had to have “squash” for dinner too!

A small can, I’m thinking, is the 15-oz. one, so approx. 2 cups.
