Made this tonight because I had the oven on anyway - took all of 5 minutes to get it ready for the oven - and my 6yo enjoyed crushing the crackers and "helping" for a change. It was excellent - we served it with pistachio ice cream or strawberry - both went over really well. Will definately do this one again.

Judy, this sounds yummy---and easy, but just one question----to what consistency do you beat the egg whites before adding the crackers?
